CAMPFIRE COOKS: FOIL PACKS

Prepare for your next camping trip by making a few of these simple, delicious, easy-to-make “foil packs”!  Make them at home,   then leave them in the cooler until you are ready to cook. You can use any combination of meat and vegetables that you like. A few warnings:  Don’t try to use less olive oil or aluminum foil, or else your dinner will burn. Also, be careful when opening the foil, as the hot steam inside could burn you.

Ingredients (makes 4 packets)

1 pound skinless, boneless chicken breast meat, cubed (may substitute additional vegetables for a vegetarian option)

2 onions, diced

1 (8-ounce) package sliced fresh mushrooms

1 yellow bell pepper, seeded and sliced into strips

1 red bell pepper, seeded and sliced into strips

4 cloves garlic, sliced

4 small potatoes, cubed

1/4 cup olive oil

¼ cup lemon juice

Directions

1. In a large bowl or large zip-top bag, combine chicken, onions, mushrooms, yellow pepper, red pepper, garlic, and potatoes. Pour in olive oil and lemon juice; then mix well.

2. Evenly divide mixture between 4 large sheets of aluminum foil. Top each with another sheet of foil; then roll up edges tightly. Wrap each packet again, securely, in another sheet of foil to double-wrap.

3. Cook in the hot coals of a campfire until chicken is opaque and potatoes are tender (around 40 minutes).
